Curd dough galette with strawberries

A simple strawberry galette. Tender and juicy. The recipe for this biscuit is far from classic. The dough for it is made in butter with the addition of cottage cheese. The biscuit turns out more rich and tender than from unleavened biscuit dough. Curd dough with juicy strawberry filling just melts in your mouth! Any berry is suitable as a filling, or you can choose assorted berries. You can bake one large biscuit from the curd dough, or several mini-galettes.

    If you use cottage cheese in grains, it is better to grind it in a blender or rub it through a sieve. The more uniform the consistency of the cottage cheese, the more tender the curd dough will be.

    Grind butter at room temperature with salt, sugar, vanilla sugar.

    Sprinkle the center of the cakes, where the filling will be, with starch through a sieve. Wash the strawberries, dry them, remove the sepals. Chop the berries randomly, not too finely. Place the filling in the middle of the dough, not reaching the edge 3-4 cm. If desired, you can add a little sugar to the filling.

I really love biscuits, especially those made with curd dough. This time with strawberries, there are a lot of them now, I just have time to make desserts with them) I kneaded the dough quickly, especially since I was too lazy to wipe the grainy cottage cheese) The result was a dough with grains, but this did not bother me or my family members. It so happened that the dough stayed in the refrigerator for a day, nothing happened to it during this time, on the contrary, it became more pliable) At first I divided it into three parts as in the description for the recipe, but I thought that they were too small. I made two pieces. I rolled it out on parchment immediately. For the filling I selected the largest, ripe and sweetest strawberries. To prevent the filling from getting wet, I first dried the berries well in air, and the starch helped, of course. I baked a biscuit made from curd dough with strawberries for exactly 25 minutes using a timer. The dough has browned and the inside has become a little porous. The filling did not leak; the sweet berry filling was absolutely stable. I am delighted! It’s very tasty, even my daughter ate it with pleasure, although she doesn’t like fruits and berries in pies.

This biscuit is far from the classic version. This is probably why it is, in my opinion, the most delicious. I even wanted your pie with juicy berries! Are you annoyed with “strawberry” recipes)! I'm very glad that even my daughter liked it.
