STEP 1
Prepare the indicated products for making crow's feet cookies. These are cottage cheese cookies, so you should pay attention to the quality of the cottage cheese: I use 9% cottage cheese. It is better to freeze margarine first, so it will be more convenient to chop it. The egg is medium. You may need a little more flour, so have some extra flour on hand.
STEP 2
Grate pre-frozen margarine (you can use butter) on a coarse grater into a deep bowl. If the margarine has not been previously frozen, you can take it from the refrigerator and chop it with a knife.
STEP 3
Add cottage cheese to margarine. You can take cottage cheese of any fat content, but then you should pay attention to the amount of flour added. If the cottage cheese is dry, then two glasses may be too much, so start adding flour gradually.
STEP 4
Mix cottage cheese and margarine evenly.
STEP 5
Add sifted flour, baking soda and egg to a bowl. Mix everything thoroughly until smooth: it should turn out cool and not stick to your hands.
STEP 6
Gather the finished curd dough into a ball, wrap it in cling film and put it in the refrigerator for 20 - 30 minutes.
STEP 7
Roll out the chilled dough into a layer 0.3 - 0.5 cm thick on a floured table. Cut out circles. The circles can be any size.
STEP 8
Pour sugar into a flat plate. Take a circle and place it on sugar. It is important to remember here: no sugar is added to the dough, all the sweetness of the finished product will depend on the amount of sugar that will be on the cookie after these three steps.
STEP 9
Next, fold the circle in half inward with the side that is covered in sugar.
STEP 10
Next, fold the semicircle in half again, with the sugar side inward. And roll the top of the quarter circle in sugar. Here you can use a fork to make an impression that will, firstly, press the layers together so that the product does not unfold in the oven, and, secondly, will imitate the crow's foot itself.
STEP 11
Place the finished cookie dough, sugar side up, on a baking sheet lined with baking paper and place it in an oven preheated to 180 degrees for 15 minutes, then reduce the heat to 160 degrees. and bake for another 10 minutes. The cookies should turn out golden brown with a sugar cap. You will enjoy delicious cottage cheese cookies both hot/warm and cooled.
