At the same time, it will not take more time than when preparing from cookies. Take the butter out of the refrigerator in advance, grind it with sugar (200g butter and 200g sugar), the rest of the sugar and butter are needed for the filling.

    Pour the sifted flour into a bowl with butter, add baking powder (it will make the dough base airy and literally melt in your mouth) and vanillin for a pleasant aroma.

    Carefully grind the dough into crumbs, do it immediately with your hands, without using equipment, it will be faster, and the dough will be more tender and softer. The crumbs should be fine and well mixed.

    Prepare the filling - curd cream. Place cottage cheese in a bowl (it is better to take it thicker). Add sugar (150g), eggs and lemon juice, it will eliminate the specific taste of cottage cheese. Beat the mixture with a blender until smooth.

    Add sour cream, softened butter, you can use thick cream instead of sour cream, it won’t be worse (the main thing is that the mass does not turn out liquid, otherwise it will not bake and the dough will become soggy). Beat the mixture again with a blender until smooth.

    Grease the pan with oil (bottom and sides). Pour the base dough into it and carefully level it with your hands, forming small edges. You should not make the bottom of the dough too thin, otherwise it will be difficult to remove the cheesecake without breaking it if the mold is not detachable. Place the curd mass with a spoon into the form with the dough and level it over the dough. Preheat the oven to 180 degrees and bake the cheesecake at this temperature for about 30 minutes.
