Sift the flour first to saturate it with oxygen. Thanks to this, the cupcakes will turn out more tender and fluffy. Rinse the orange well, dry it and grate the zest from it. Orange zest can be replaced with lemon zest. Prepare a muffin pan. Turn on the oven to preheat to 170 degrees.

    In a deep bowl, beat softened butter with salt, sugar and vanilla sugar into a fluffy mass. The sugar should almost dissolve, so you can use fine sugar or powdered sugar to speed up the process.

    Without stopping beating, add one egg at a time, mixing the dough thoroughly each time.

    To make small muffins, you can use paper capsules (without them, grease the pan with oil). Pour the finished dough into the molds, filling them 2/3 full. For a large cake, line the pan with baking paper or grease with vegetable oil.

    Bake the cupcakes in the preheated oven for 20 - 25 minutes. Check doneness with a wooden skewer - it should come out dry from the middle of the cake. Bake a large cake for 60 - 80 minutes. Do not open the oven for the first 20-30 minutes.

The cupcake batter recipe is new to me, I’ll save it in my notes and try it someday. I usually prepare kefir dough according to this recipe.

My cupcakes turned out very tasty, tender, crumbly and sweet. Consolidation! Having broken the cupcake, I saw a porous, juicy dough, which in appearance and taste reminded me of Turkish desserts. Of all the ingredients, I did not add orange zest and vanilla sugar to my cupcake dough. I replaced butter with margarine, making the baking more budget-friendly. The cooking process is simple - I crushed the margarine, added salt and sugar to it, and stirred. Added eggs one at a time, then sifted flour. I put the finished dough into six molds, filling them halfway (cooked for 3 servings). I baked the cupcakes for 20 minutes at 220° (I set this temperature due to the way my oven works). Wonderful recipe! I recommend it to everyone! Many thanks to the author!
