Cucumbers in Georgian style

A cool option for a savory preparation for the winter! Georgian cucumbers in tomato juice with dry adjika - an option for those who like it hot! I really liked this spicy, sweet and sour snack with the characteristic taste and aroma of Georgian adjika. In winter, I think it will be very soulful!

    STEP 1

How to make cucumbers in Georgian style? Prepare all the necessary ingredients. Take the pickling variety of cucumbers (dense and prickly). I have an assortment of red and orange tomatoes, but this is absolutely not important! Wash the vegetables under running water. Dry adjika can be found both on store shelves and in bulk at the market. You will learn important subtleties of preparing winter preparations by reading the article at the end of this recipe.

  2. STEP 2

    STEP 2

Grind the tomatoes into puree in any convenient way: through a meat grinder or a blender. Pour the mixture into a thick-bottomed saucepan.

  3. STEP 3

    STEP 3

Place the puree over low heat and, stirring, bring to a boil. Once the mixture has boiled, add salt, sugar and sunflower oil. Cook the puree for another 15 minutes.

  4. STEP 4

    STEP 4

During this time, cut the cucumbers into circles 5-7 mm high. and place them in the pan. Add nine percent vinegar. At this stage it may seem like there are too many cucumbers, but that's how it should be! The cucumbers will still give up their liquid.

  5. STEP 5

    STEP 5

Add dry adjika and finely grated garlic. The appetizer is supposed to be spicy, but the amount of spice is fine! adjust to your taste, soberly assessing the capabilities of your body :)

  6. STEP 6

    STEP 6

Cook the cucumbers for another 10-15 minutes until they change color. If you cook longer, the cucumbers will not crisp up.

  7. STEP 7

    STEP 7

During this time, you need to have time to wash and sterilize the jars. I usually do this. I pour a centimeter of regular tap water into each and heat it in the microwave for 3 minutes at 800 W. The water should boil. Just pour boiling water over the lids.

  8. STEP 8

    STEP 8

Distribute the snack among the jars, filling them up to the neck. The less space left in the bank, the better.

  9. STEP 9

    STEP 9

Seal the jars with lids, turn them upside down, cover with a warm blanket and leave at room temperature until completely cooled. After which you can put the workpiece away for storage in the pantry.
