It cooks quickly and turns out very tasty. These cookies are suitable for both tea parties with the family and the holiday table. In Poland, these cookies are usually baked for Christmas. It is very tender, tasty, does not go stale for a long time and does not spoil, so it can be baked in advance of the holiday.

To taste, you can add finely chopped prunes and dried apricots, use not only walnuts, but also hazelnuts, almonds or peanuts. But it is in this composition that real Polish cookies are obtained.

    Wash the walnuts, dry them in the microwave or in a dry frying pan and grind them using a rolling pin or coffee grinder, depending on the size of the walnut pieces you want to see in the cookies.

    If you grind it into crumbs, you will only feel the nutty taste, but they will not be found in the dough.

    Wash the raisins, pour hot water so that they swell a little and leave for 15 minutes. Then drain the water and place the raisins on a paper towel so that all the liquid drains from the dried fruit.

    Beat the eggs into a bowl or blender, add sugar.

    Beat the ingredients together with a whisk, mixer or blender until you obtain an increased volume, thick, white, foaming mixture. The cooking process is similar to making biscuit dough.

    Add baking powder, mix, the mass should increase slightly in volume and thicken slightly.

    Pour in the sifted wheat flour, gently mix the dough with a spoon so that it does not settle, but the flour disperses through the liquid mixture and the dough is homogeneous and thick, like sour cream in consistency.

    Add chopped walnuts and raisins to the dough. Mix the dough again. Preheat the oven to 180 degrees.

    Cover the baking pan with parchment or grease it with butter. Spoon the dough into the pan. You can sprinkle the dough with walnut crumbs on top. After baking it turns out very beautiful.

    Bake cookies for about 20 minutes. It should be nicely browned on top. Remove the cookies, cool in the pan, and cut into squares or rectangles.

I came across this recipe for unusual cookies with walnuts and raisins. I took just a little raisins, to my taste, I didn’t soak them, they were quite juicy for me. Lightly toast the walnuts in a dry frying pan. Beat the eggs with sugar with a mixer, while reducing the amount of sugar. This way the cookies turned out less sweet, but lost the crispy sugar crust on top. I stretched the dough with a spatula over a baking sheet covered with a Teflon mat, sprinkled nuts on top (and immediately mixed a handful of raisins with the dough). Bake for about 10-12 minutes. The cookies turned out to be unusual and unusual in structure. I don’t know exactly how the author intended it, but I needed to dry it longer (not even necessarily in the oven, you can just leave it on the table overnight) so that it becomes drier and more like a cookie. In any case, my children ate these cookies with pleasure. Thanks for the recipe!
