Cold green soup with cucumbers and kefir for weight loss

Amazingly delicious soup - especially good in the summer! I spied this culinary recipe for a traditional Bulgarian dish while on vacation abroad in a local establishment where the food is delicious. There this soup is called “Tator”. The dish is indispensable for the diet - it is light on the stomach and low in calories.

    For the soup, we will prepare the products from the list. I met this dish in a cozy restaurant in Bulgaria. It was there that I learned how to make cold soup from greens with cucumbers on kefir for weight loss.

    Take fresh cucumbers, wash them and cut them into small strips or grate them on a coarse grater. If the peel of the cucumbers is hard, then I remove it. Also, cucumbers should be without bitterness so that the taste of the dish does not deteriorate.

    Pour the kefir into a blender bowl and add very cold water. I usually take the pod not from the tap but cleaned. To do this, you can pass it through a special filter or make protium water at home. I always have this water on hand as I make it every day. To do this, I pour water into a plastic bottle, freeze it, and then let it thaw at room temperature. Add chopped garlic to the blender with kefir and water and beat everything.

    Pour the resulting mass into a deep container, season with salt and pepper, and add vegetable oil. Mix.

    We beat the walnuts with a hammer, peel them and crush them into fine crumbs using a masher. I always have shelled nuts in my house. I cut them up in advance in my free time, so that later, when they are urgently needed, I don’t waste time preparing them. You can buy cleaned ones at the store. I tried grinding the nuts in a coffee grinder, but they release greasy oil and stick to the knife, so it's better to do it by hand.

    When all the ingredients of the soup are ready, serve. To do this, put a couple of tablespoons of cucumber chips in a serving bowl.
