STEP 1
How to make a classic Ryzhik salad with carrots and cheese? Prepare all the necessary ingredients according to the list. For this salad, choose fresh, juicy, bright orange, large or two medium-sized carrots. Use high-quality processed cheese.
STEP 2
Wash the carrots well under running water. Peel using a vegetable peeler. If the carrot is young, it is not necessary to peel it, the main thing is to wash it thoroughly with a stiff brush. I grated the carrots on a Korean grater. You can grate it on a large or medium grater. This is not important.
STEP 3
Place the processed cheese in the freezer for half an hour in advance. Thanks to this, it will rub better. Grate it also on a large or medium-sized grater.
STEP 4
Peel the garlic clove. Rinse, dry with napkins. Grate on a fine grater or pass through a press. By the way, you can increase the amount of garlic according to your taste.
STEP 5
Place the grated carrots, processed cheese, and chopped garlic into a suitable container. Add a couple of tablespoons of mayonnaise. It is better to prepare mayonnaise yourself; it will be healthier and tastier. You can replace it with sour cream or natural thick yogurt and the dish will turn out to be less calorie. Add salt to taste. The amount of salt will depend on what you decide to season the salad with. If you use sour cream or yogurt, you will need more salt.
STEP 6
Mix the salad and dressing thoroughly. Ready.
STEP 7
Now start decorating the salad. You can simply put it in a salad bowl or portioned bowls and serve it to the table. I used a culinary ring, so the dish will look neater and more elegant. Place a cooking ring on a flat plate, place the salad in it, and smooth its surface with a spoon. Place the salad in the refrigerator for 1 hour. During this time it will be well soaked.
STEP 8
After an hour, remove the salad from the refrigerator. Carefully remove the cooking ring. Decorate as you wish. For example, parsley, dill, lettuce. Ryzhik salad is self-sufficient and does not need any additions. But if you need a more satisfying option. Serve it with boiled pasta and mashed potatoes. It is perfect as an accompaniment to meat.
