Lean, simple and delicious, in a hurry! Classic rustic salad has several cooking options. But I prefer the option with mushrooms and pickles. It is available in composition and quite easy to prepare. In winter, I prepare this salad quite often!

    How to make a classic country salad with mushrooms? Prepare the necessary ingredients for this. You can use any pickled mushrooms. I will cook from pickled champignons. Wash the potatoes and cover with water. No need to clean. Place on the fire, bring to a boil and cook for 20 minutes until the potatoes become soft. This can be checked by simply piercing it with a knife. Then drain the hot water.

    Cool the boiled potatoes completely and peel them. The skin of boiled potatoes can be easily peeled with a sharp knife. Cut the peeled potatoes into small cubes and place in the bowl in which you will prepare the salad.

    Also cut the pickled cucumber into cubes and add it to the potatoes.

    Next, add the chopped mushrooms to the bowl. My champignons are small, so I cut them into only 4 parts. You can buy pickled mushrooms ready-made or pickle them yourself at home.

    Wash fresh greens in running water and chop finely. Then transfer it to a bowl and season everything with aromatic sunflower oil. Taste the salad. Then add salt and pepper. When adding salt, keep in mind that the mushrooms and cucumbers are already salted. You may not need to add any salt at all.

    Mix all ingredients together. Country salad with mushrooms is ready! It is very tasty, satisfying and healthy. It can be served in addition to main hot dishes!

Winter has come, and I wanted hearty salads) When I saw this recipe, I immediately realized that it was time to get jars of cucumbers and mushrooms out of stock! My cucumbers are small, so I took several of them. They were just right for the salad, strong, with small pimples, very tasty, crispy. I salted the mushrooms a month ago, it’s just time to try it, I have value. They’re also delicious) Looking at this still life, I realized that I was missing onions. Ideally, purple would have been better, but it's out of stock. I took a small head, cut it into quarter rings, washed it in cold water, and then marinated it in apple cider vinegar and sugar for 15 minutes. Then I squeezed it out and added it to the bowl with the salad. It’s a pity there wasn’t unrefined oil, it would have been more flavorful. The salad is just bomb! For me it has become a complete dinner, because it is not only tasty, but also filling and healthy. Wonderful salad, I recommend it to everyone!

I prepared a classic rustic salad with mushrooms. I was treated to a jar of pickled forest mushrooms, I added boiled potatoes, pickled cucumbers, green onions, dill, added salt, pepper, seasoned with vegetable oil... Yummy!!!! Simple, but very tasty! Thanks for the recipe, Yulia M!!!
