    On a lightly floured surface, roll out the dough into a thin rectangular sheet.

    Gently transfer the dough into the mold, pressing it to the bottom, sides and corners of the mold.

    Trim the excess dough, use a fork to make a lot of holes and place the dough in the refrigerator for half an hour.

    Preheat the oven to 180 degrees. Cover the dough with food (heatproof paper). Sprinkle the beans on top and place in the oven for 15 minutes. Then remove the pan, remove the paper with the beans and bake for another 10-15 minutes, until the crust is golden brown. Remove the pan from the oven and cool completely.

    Beat the yolks with sugar until creamy and add flour.

    Cut the vanilla pod in half and sprinkle the seeds into the milk. Boil the milk and immediately pour it into the previously prepared cream, whisking constantly. Put everything on low heat and bring to a boil, reduce, and simmer for a couple of minutes. Strain the entire mixture into another container through a sieve.

    Pour the cream into the mold, smooth it out and wait until it cools completely. While the cream is cooling, prepare fruits and berries. Peel the fruits, remove the stems and cut into thin slices. Cut the strawberries into two parts, remove the branches from the red currants. Arrange everything as desired on top of the frozen cream. Heat the apricot jam, bring to a boil, rub through a sieve and brush the fruit with the resulting mixture. Place in the refrigerator until completely frozen.

I would probably argue about the classic fruit cake, because it looks like a pie or a cheesecake or a French tart. But it looks just amazing, you’ll rock it! and the good thing is that you can put any fruit, seasonal or some canned fruit.
