STEP 1
How to cook classic chicken soup with homemade noodles? Prepare the indicated products. If you have large onions and carrots, you can take half each. For chicken broth, you can use chicken legs or 3 chicken thighs. If you have the opportunity to take homemade soup chicken, then it is better to take advantage of it. The amount of noodles you get will fit into a 3-liter pan.
STEP 2
Rinse the chicken legs under running cold water and remove any remaining feathers. If you adhere to the principles of a healthy diet, then the skin should be removed. Fill the legs with cold water, bring to a boil, drain the water and rinse the chicken. Fill with cold water again (3 liters) and put on fire. Bring to a boil (skim off foam if necessary), reduce heat and simmer chicken over medium heat for 30 minutes.
STEP 3
How to make egg noodles for chicken soup? Sift the flour into a deep bowl, add a pinch of salt. Make a hole in the flour and crack one egg into it. First wash the egg with baking soda to remove any dirt. Knead the dough. Grease your hands with vegetable oil and knead the dough for 5-10 minutes. You may need a little less or more flour. The dough will be tough and elastic. Place in a warm place for 15-20 minutes or leave on the table next to the stove. The dough is ready.
STEP 4
Peel and wash the vegetables. Finely chop the carrots and onions. Add chopped vegetables to the broth. Add some salt. Wash the dill, dry and finely chop. Add half of the chopped dill to the soup - this is not necessary, I do it to my taste, I like the soup to have boiled and fresh dill. If desired, you can add other greens. Cook the soup with vegetables for 15 minutes.
STEP 5
How to make homemade noodles for chicken soup with your own hands? Roll out the dough on the table into a very thin sheet, try to roll it out as much as possible so that the dough turns out very thin. Leave the finished sheet on the table for 5 minutes to dry. Then roll the sheet into a loose roll and cut very thinly.
STEP 6
Disassemble the finished noodles with your hands and place them on the table. Try not to tear the noodles, but to keep them long. If you get a lot of noodles to your liking, you can save them for next time - to do this, leave them on the table to dry. Then put it in a sealed container for storage. Store in a dry, dark place.
STEP 7
Peel the potatoes and cut into cubes. Add chopped potatoes to the soup. Cook for another 10 minutes. Taste the soup and add salt if necessary.
STEP 8
Remove the chicken legs from the soup. Add the cooked noodles to the soup, stirring to prevent them from sticking together. Boil the soup for 3 minutes and turn off the heat.
STEP 9
Let the finished soup brew for a few minutes under a closed lid and you can pour it into plates. Pour noodle soup into each bowl, add chopped chicken and fresh dill. Bon appetit!
