Add eight hundred grams of pre-sifted flour to a common bowl in parts and start mixing it with a whisk as quickly as possible.

Add another portion of flour to the bowl and continue mixing vigorously.
STEP 6
Break one chicken egg into a bowl with flour.
STEP 7
Thoroughly mix all ingredients in a bowl with a whisk until smooth.
STEP 8
We continue to add flour to the bowl with the dough and begin to knead it by hand.
STEP 9
Add a little more flour to the bowl.
STEP 10
Place the dough on a floured table and knead it thoroughly with your hands for about ten minutes.
STEP 11
If necessary, add flour so that the dough does not stick to the table and hands.
STEP 12
To ensure that the dough is completely ready, let it sit and develop gluten for about thirty minutes; to do this, we remove it so that it does not weather and dry out in a plastic bag or a convenient container, which we cover with cling film.
