STEP 1

How to prepare chokeberry compote for the winter? Prepare the necessary products. For compotes, it is better to take larger jars (1.5 l, 2 l, 3 l). It is not recommended to use smaller jars; they do not hold the desired temperature for too long, or they will need to be sterilized.
STEP 2

The first step in this recipe is to prepare the jars; everything else won’t take much time or effort. Rinse jars with baking soda. Place the jars wet in a cold oven, neck down, and place the lids there. Turn on the oven at 150 degrees, after reaching the set temperature, sterilize the jars: 1l - 15 minutes, 2l - 20, 3l - 25 minutes. For me, this method of sterilization is the most convenient; I have been using it for many years. You can choose another method.
STEP 3

Sort the berries, rinse well with cool water and place in a colander to drain the water.
STEP 4

Fill sterilized jars 1/4 full with berries; add lemon slices to improve the taste.
STEP 5

Pour into a large saucepan the maximum amount of water that can fit into the jars you have chosen, boil and add sugar at the rate of 200g per liter of water. Boil for a couple of minutes. If the syrup remains, you can cook a regular compote for every day.
STEP 6

Immediately pour boiling syrup into the prepared overflow jars and secure with sterile lids. Roll the jars over the table, checking for leaks, and wipe clean.
STEP 7

Turn the jars over onto the lid and leave until cooled, covered with a warm blanket or blanket. Store the finished compote in a dark, cool place. The compote is prepared using the “accelerated” hot filling method, without sterilization. It saves a lot of time and the workpieces are stored well.
STEP 8

Red rowan compote is also easy to prepare. For 1 liter of water take 250-300g of sugar. Clean rowan should be immersed in boiling, lightly salted water for 4-5 minutes, then immediately cooled in cold water. Let the water drain and place the berries in sterile jars. Pour boiling syrup over the rowan and leave until cool. Then drain the syrup, bring to a boil again and refill the overflow jars and roll up the lid. Good luck with your preparations!
