STEP 1
How to make chicken cutlets with cabbage? Take all the necessary ingredients. The ratio of the proportions of ingredients can be changed according to taste and desire by using cabbage and chicken meat in equal proportions, or in some other way change their proportions up or down.
STEP 2
Take white cabbage, remove the top dirty leaves, wash and dry it, chop it using a food processor, blender or hand chopping. Remove the stalk, it can give the minced meat a bitter taste. It is better to use young and juicy cabbage. Place the minced cabbage in a bowl, add a pinch of salt and remember well with your hands so that it releases the juice. There is no need to squeeze the juice out of the cabbage, because it will add juiciness to the minced chicken.
STEP 3
Next, take the chicken meat, rinse well under running water, dry, and grind in a meat grinder or blender. Peel, wash, dry and finely chop the onions with a knife or blender.
STEP 4
Place cabbage mixture in a bowl with minced chicken. Place the cooked onions in a bowl with minced meat. Add salt and ground black pepper. Beat a chicken egg into a bowl. Wash the egg first in warm water and soda, as there may be harmful bacteria on its surface.
STEP 5
Mix everything well so that the ingredients are combined and the spices are evenly distributed throughout the minced meat.
STEP 6
Pour wheat flour into a plate. With your hands soaked in cold water, form small cutlets from the prepared minced meat and roll them in flour. Instead of flour for breading, you can use breadcrumbs. Heat a frying pan on the stove, pour in vegetable oil.
STEP 7
When the oil is hot, place the cutlets in the pan. Fry them over medium heat until golden brown.
STEP 8
Fry the cutlets for 5 minutes on each side. Then pour a little water into the frying pan, close it with a lid and simmer the cutlets for about 25 minutes over low heat. Then remove the lid; if there is still liquid at the bottom of the pan, let it evaporate by holding the cutlet a little on one side and turning it over to the other so that the crust on both sides is dry.
STEP 9
Remove the finished cutlets from the pan and serve with sour cream or other sauce. Bon appetit!
