I like cooking it three times. At the same time, the fruits are saturated with syrup as much as possible and become transparent, beautiful and tasty. The whole process took me a day and a half) Yellow cherries are sweet in themselves, so the sugar indicated in the recipe is quite enough. I replaced the citric acid with two teaspoons of dried lemon zest; by the way, it steamed during the cooking process and began to be pleasantly chewed, like marmalade) I liked the jam, it was tasty and rich, with a fairly thick syrup. In winter, it will be pleasant to while away the evenings with a cup of hot tea and sunny cherry jam.
