    You can use any variety of cherries for compote. The main thing is that the berries are ripe and sweet, but not overripe and bursting, otherwise the drink may begin to ferment. Sort the cherries, remove spoiled, bruised and rotten berries, twigs, and leaves. Rinse the berries thoroughly and place them in a colander to drain the water completely.

    Place the cherries in pre-washed and sterilized jars. The jars are about a third full. Boil water in a kettle or saucepan and pour boiling water over the cherries in the jars up to the neck. Hot water should be poured into the jars in a thin stream, trying to get into the center so that the glass does not burst from sudden heating. Cover the jars with sterile lids and leave for 15 minutes.

An easy way to prepare cherry compote for the winter! I didn’t sterilize anything, I just poured boiling water over clean jars and lids. I placed cherries in jars in smaller quantities, as indicated in the recipe. Judging by how sweet our cherries are this year, the compote is unlikely to survive until winter; the children will drink it much earlier. Thanks to the author for a great way to extend the cherry season by preparing such a healthy drink for future use!
