All adults will appreciate this unusual dessert. Due to the presence of alcohol, the dessert is not suitable for children! If you need a children's version, then the wine can be replaced with cherry juice half and half with water. Or just cherry juice without water, but reduce the amount of sugar. The dessert will turn out sweet anyway.

    Remove a thin layer of zest from the orange, being careful not to capture the white part, otherwise the dessert will be bitter.

    Chop the orange zest with a knife as finely as possible.

    In a saucepan, combine cherries (and juice from fresh cherries, if available), sugar, orange zest, powder for cherry jelly (you can use any other red jelly, such as blackcurrant, but I wanted to emphasize the cherry flavor) and a cinnamon stick.

    Pour in the wine. You can use any wine - dry, sweet, semi-sweet. When choosing a sweet wine, it is better to reduce the amount of sugar to 1 tbsp. l., or even remove it altogether (after all, the jelly mixture already contains sugar), otherwise the dessert will turn out cloying.

    Place the saucepan on the fire, bring the wine to a boil and cook over low heat, stirring, for 20-25 minutes.

    Take out the cinnamon stick. If you don’t like orange zest in dessert, it’s better to remove it too when it gives off its aroma to the wine. But in this case, it is better to add it in large pieces so that they can be easily caught. I left the zest in the dessert itself, so I immediately chopped it finely.

    Place the cherries in wine into glasses or bowls and refrigerate for 1-2 hours until completely set.

    Decoration. To decorate the finished dessert we will need: whipping cream (33-35% fat)

    Beat the cold cream together with vanilla sugar into a thick, stable foam. Place the cream in the refrigerator for 20-30 minutes so that it cools and holds its shape better.

    Transfer the whipped cream into a piping bag. If you serve dessert right away, you can immediately pipe the whipped cream onto dessert. If serving the dessert later, it is better to prepare the whipped cream just before serving. You can use ready-made whipped cream from a can.
