Chebureks with kefir

STEP 1
How to make crispy pasties with kefir? Prepare the necessary ingredients. Sift the flour in advance. Thanks to this, it will be saturated with oxygen, and the dough will turn out more tender. For minced meat, take the amount of onion at the rate of 1 part onion to 2 parts minced meat. Although, if you wish, you can take more onions at a ratio of 1:1. You can use any spices to your taste, I added 1 tsp. curry. Water for filling can be replaced with broth.
STEP 2
First, knead the dough for pasties using kefir. Pour kefir into a cup, beat in the egg and beat everything with a whisk or fork.
STEP 3
Then add salt and gradually add the sifted flour, kneading the dough, which should be elastic and slightly sticky to your hands. Please note that you may need a little more or a little less flour than the specified amount.
STEP 4
Cover the dough with cellophane or a towel and leave it for 20 minutes. During this time, gluten will develop in it, and the dough will become more obedient and pliable.
STEP 5
While the dough is resting, make the filling. Peel a large onion and chop finely. To prevent the onion from stinging your eyes when slicing, rinse it and the knife with cold water.
STEP 6
Mix the minced meat, onion, salt, ground black pepper and spices well.
STEP 7
Add water (broth) to the minced meat to make future chebureks juicier. Mix everything well again so that the salt and spices in the filling are evenly distributed.
STEP 8
For ease of rolling out, divide the dough into several parts. Dust the table with flour and roll out each part thinly, but not too much so that the dough does not tear under the weight of the filling. Using an appropriately sized saucer, cut out circles from the dough.
STEP 9
Place the filling on half of the circle.
STEP 10
Cover the filling with the other half of the dough, pressing lightly on it to release excess air. Roll the edge of the saucer along the edges of the pasties so that they stick together well. Then go along the edges of the workpieces with the tines of a fork so that the edges stick together better and look more beautiful.
STEP 11
Heat vegetable oil in a frying pan. Fry the pasties over medium heat on both sides until deliciously golden brown.
STEP 12
Place the finished pasties on a towel or paper napkin to remove excess oil. Then transfer the finished pasties into a large bowl on top of each other and cover with a towel or lid so that the dough becomes softer under the steam emanating from them.
