    How to bake chicken on coals in foil? Prepare the necessary ingredients. I had the breast on the bone. You can also use boneless fillets or bone-in thighs. In the latter case, it is better to remove the skin first. It is better to choose small potatoes so that they have time to bake. Potatoes can be replaced with asparagus, bell peppers, champignons or zucchini, cut into slices. Wash, peel and cut the carrots into cubes about six centimeters long.

    I cooked potatoes in their jackets. Therefore, I thoroughly washed the skin and rubbed it with a sponge. Instead, you can simply cut off the skin of the potatoes with a knife as usual. Cut the tubers in half.

    Wash the chicken breast fillet and cut in half. This is necessary so that the future envelope fits on the grill grate.

    Next, place the chicken in a regular plastic bag and add spices: paprika, cumin, suneli hops and dried herbs. Salt and pepper to taste.

    Marinate potatoes and carrots in a bag with Dijon mustard, salt and grape vinegar. Meat and vegetables must be marinated for at least two hours. Better yet, marinate in the morning and fry in the evening.

    After the specified time has passed, peel the small onion and cut into four parts. To prevent the onion from stinging your eyes when slicing, rinse it and the knife with cold water.

    Spread two layers of foil on your work surface. Add chicken, potatoes, carrots, onions and washed cherry tomatoes. Vegetables should not overlap the chicken on either side.

    Cover the chicken with two more layers of foil and seal the edges tightly to form an airtight envelope. Place the envelopes on the grill grate. The temperature of the coals should be the same as for barbecue. Total cooking time is about 20 minutes. The chicken needs to be turned over periodically. The main thing is not to overcook the chicken breast so that it does not become dry. After 20 minutes, place the envelopes directly on the coals for two to three minutes to brown on each side.

I decided to cook chicken over coals on the grill at the dacha. I used thigh fillet. My potatoes were medium sized, so I cut them into four pieces. I didn’t add onions. For spices for the meat, I took paprika and dried pomegranate. For vegetables I used regular Russian mustard and 9% vinegar instead of wine vinegar. I marinated the meat and vegetables for about 5 hours. I distributed the meat and vegetables into five foil envelopes. The chicken was baked on coals for the same amount of time as indicated in the recipe. At the end of baking, I checked the meat and vegetables for doneness. Those envelopes that were in the middle were ready, but the one on the edge was a little undercooked, so I kept it on the coals for another five minutes. The dish turned out to be very aromatic. The chicken is very tender, soft and juicy. The vegetables were perfectly baked and also turned out very soft. Thank you very much for the recipe!
