If you have large tubers, cut them into small pieces. Fill with cold water and place over medium heat.

    While the potatoes are cooking, prepare the Béchamel sauce. Heat the milk until hot. Then melt the butter in a saucepan or small frying pan over low heat, stirring constantly with a spatula. It is better to use cookware with a non-stick coating.

    Add flour to the butter and rub until smooth. You need to stir constantly.

    Gradually add milk literally one or two spoons at a time, immediately scooping it up with a spatula and rubbing it into the sauce.

    Add all the milk and bring to a boil. Salt the sauce to your taste and remove from heat. Our sauce should be liquid. Even if you find it too liquid, don't worry. The Bechamel sauce will thicken a little as it cools. To prevent a skin from forming, cover the sauce tightly with cling film. But you don’t have to do this, since the presence of film is not essential for this dish. I did not cover the sauce, but stirred it with a whisk before using it in step 10.

    Cook the potatoes for 25 minutes after boiling. When the potatoes are ready, drain all the water from them.

    Divide the mold into 6 equal squares. Along the dividing lines, using a table knife or, like me, the handle of a spoon, make indentations of about 1 cm. Make the width of these lines 1.5-2 cm, the main thing is that the same squares of mashed potatoes remain.

    How to make gravy for sausage mashed potatoes? Grate the mozzarella on a coarse grater. Rinse the greens thoroughly and dry. Select sprigs to decorate the casserole as flower stems. Remove hard stems from about half of the greens and chop with a knife.

    Add chopped herbs to the sauce and stir until smooth.

    Remove sausages from packaging. Make transverse cuts on one to approximately the middle of the sausage. Connect the ends together using a toothpick. If you don't cut the sausage deep enough, it may break at this point when twisting. Therefore, do everything carefully so as not to spoil the sausages. Try the resulting blank onto a square of mashed potatoes. If the sausage fits freely, do the same with all 6 sausages.

    Place the mozzarella on the squares in the middle first and the sausage on top. Place the cheese and sausage lightly without pressing. This is necessary so that the egg white spreads evenly and mixes with the cheese without covering the sausage. Carefully cut off the visible edges of the toothpick using scissors or tongs.

    Perform the last step very carefully. Wash the eggs and wipe with a dry towel. Carefully, so that the yolk remains intact, break the egg and slowly transfer it inside the sausage. I really liked the idea of ​​making a great dish out of ordinary ingredients. It is so beautiful and not difficult to prepare. I bought sausages 15 cm long according to the author’s recommendation and twisted them into future suns without any problems. I prepared the bechamel sauce and added a little more ground nutmeg. I made mashed potatoes with ease. I used fresh parsley. Instead of mozzarella I used hard cheese.
