STEP 1

How to make carrot salad with mayonnaise and garlic? Prepare all the necessary products. It is best to take fresh carrots from a new harvest. You can use garlic powder instead of fresh garlic. Mayonnaise can be replaced with sour cream, yogurt or even kefir or fermented baked milk.
STEP 2

Wash the carrots well from the soil, cut off the stem and peel. Cut the skin thinly; it is convenient to do this using a special vegetable peeler.
STEP 3

Pat the carrots dry with paper towels and grate. It can be a fine grater, a medium grater, or a grater for Korean carrots. In this matter, be guided by your taste.
STEP 4

Salt the carrots. After about 5 minutes, the carrots will release juice. There is no need to pour it out. This juice is the key to the juiciness of the salad.
STEP 5

Peel the garlic, chop it and add it to the carrots. I put the clove through a press, but you can chop it with a knife or grate it on a fine grater. At this stage, you can add something to the salad to your taste: it could be fresh parsley, dill, cilantro, dried Provençal herbs or just ground pepper.
STEP 6

Add mayonnaise.

Mix everything and put it in a salad bowl.
