    STEP 1

How to cook borscht without potatoes? Prepare all the necessary products. Take any meat, but preferably beef or chicken, they will make the dish lighter and less caloric. Pre-cook the beets in their skins or bake them in the oven, so their color and beneficial properties will be better preserved, and the borscht will be brighter.

  2. STEP 2

    STEP 2

Rinse the meat well and put it on the fire, after boiling, remove the foam, boil for 5 minutes, drain the first broth and add fresh water, this way the broth will be healthier. Add the bay leaf and cook the meat for about an hour.

Wash the onions and carrots, then peel them. Chop the onion and grate the carrots on a coarse grater.

  4. STEP 4

Throw sauerkraut into the borscht, boil for 5 minutes, add salt and pepper to taste.

My husband asked me to make him some soup without adding potatoes. I found a recipe for borscht without potatoes on the website. The composition is rich, I liked it. I reduced the number of servings using the website’s calculator, which is very convenient. I cooked the broth from beef pulp for 1.5 hours, I wanted the meat to be well cooked. My sauerkraut is homemade. I baked the beets the night before and put them in the refrigerator. In general, I thought that with such beets the borscht would not be very bright. But he turned out to be very attractive to look at) The tomato also played a role in this, of course. What I liked most was that the beets in the soup did not lose their color. The borscht also acquired a sweetish taste without adding sugar. My son said that in this version the beets are not so noticeable (he doesn’t like their taste). So not only my husband liked borscht without potatoes) I would like to note that it is not only tasty, but also very filling. Thanks for the recipe!
