    How to make hogweed for the winter in jars? Prepare all ingredients according to the list. Housewives often make this preparation in order to further minimize the time required to prepare borscht. This is also a great way to prepare vegetables for the winter if you don’t have a pantry to store fresh vegetables. Wash the beets well with a brush under running water, peel them and grate them on a coarse grater.

    Peel the onions and finely chop them with a knife or also pass them through a food processor. I used purple onions, but you can also use regular ones.

    Place the cooked vegetables in a saucepan, add vegetable oil and a third of vinegar (vinegar must be added so that the beets retain their color during stewing), stir and place the saucepan with the vegetables on the fire. When they release juice, add water and stir. Simmer for about 15 minutes over medium heat, stirring occasionally so that the vegetables do not burn to the bottom and spoil the taste of the preparation.

    Wash the tomatoes, remove the stem attachment point, cut the pulp into cubes and puree with a blender, or pass through a meat grinder.

    Add tomato mass, sugar, salt, bay leaf and peppercorns to the pan with vegetables, stir. Let the mixture boil, reduce the heat and simmer over low heat for about 30 minutes. 5 minutes before the end of stewing, pour in table vinegar, let the mixture boil again and turn off the heat.

    In the meantime, you can sterilize the jars for the preparation. Wash the jars with soda solution and sterilize using one of the convenient methods. I like to sterilize jars in the oven. Place wet jars neck down on a wire rack and turn on the temperature mode to 150 degrees, keep 0.5 liter jars at this temperature for about 10 minutes. Wash the lids and boil.

    Place hot borscht dressing into sterile jars. It is better to use small jars for such preparation. So that after opening, it can be immediately used to prepare soup or other dishes. Place jars (0.5 l.) in a pan covered with a cloth, add hot water to the hangers of the jars, sterilize for about 10 minutes. Roll up the jars with lids, turn them over, wrap them in a blanket and let cool. Store the cooled workpiece in the cold.

I was planning to make borscht in jars for the winter, having searched the website for a recipe, I settled on borscht in jars for the winter. I grated beets and carrots on a coarse grater, and cut the onion into cubes. I stewed the vegetables with vegetable oil and one third of vinegar until the juice stood out. Adding water, simmer for another 15 minutes. After that, I put tomatoes, sugar, salt, bay leaf, and peppercorns, ground in a blender. I left it on low heat for half an hour, and at the end (five minutes before the end of simmering) I added the remaining vinegar. I put the hot borscht into sterilized jars and immediately rolled them up with boiled lids. I did not sterilize the jars in the pan. Last year I made borscht the same way (using a different recipe), the jars were well stored and did not open. I tasted the borscht and really liked it. In winter I will cook my favorite borscht!
