STEP 1

Thanks to sifting, the dough rises better and the finished products are more airy. Heat the milk until warm, approximately 36-40 degrees. In cold liquid the yeast will ferment more slowly, but in hot liquid it will cook. Wash and dry the blueberries.

To prepare yeast dough, pour a little warm milk into a spacious bowl and add sugar and yeast. Stir so that the yeast starts its work faster and leave to stand for 5-10 minutes.

Then pour in the remaining warm milk. Add melted butter, eggs, sour cream and salt. For flavor, you can add a little lemon or orange zest at this stage. Mix everything.

Gradually add sifted flour and knead the dough. Use the amount of flour based on the consistency of the finished dough. You may need a little more or less than what is indicated in the recipe.

It is convenient to knead the almost finished dough with hands greased with vegetable oil. The dough will not stick to your hands and will stop taking in excess flour. Cover the soft, pliable dough with a towel and place in a warm place for 1 hour to rise.

In a warm place, the dough quickly increases in size. It has increased several times. You can start making pies.
STEP 7

Pinch off a little dough and make a flat cake out of it. Spread a little starch over the dough, add blueberries and sprinkle a little sugar. Fold the tortilla in half, pinch the edges and form into a pie.
STEP 8

Preheat the oven to 180 degrees. Line a baking tray with parchment or a non-stick mat. Place the prepared pies on a baking sheet and brush with egg yolk so that they brown during baking. Leave the pies to stand on the baking sheet for 10-15 minutes. Then place the pan in the oven for 20-25 minutes.
STEP 9

The finished pies are golden brown. Remove them from the baking sheet, cool slightly and serve. Enjoy your meal!
