STEP 1

STEP 2

Sort the berries thoroughly, remove any debris, twigs and leaves, rinse well under running water and drain in a colander. Let the water drain completely.
STEP 3

Using a masher or blender, mash the berries until you obtain a homogeneous puree. You can pass the currants through a meat grinder. If desired, the berries can be rubbed through a sieve to remove the skin and large seeds, but it is better not to do this, since all parts of the berries contain useful substances.
STEP 4

Pour sugar into a container with berry puree.
STEP 5
