    After 15 minutes, a “cap” like this should form on the surface - this means that the yeast is good, working, it has woken up and begun to act. Add salt and all the flour, after sifting it. Thanks to this, it will be saturated with oxygen, and the finished dough will turn out more tender. Start stirring with a spoon.

    When all the flour is wet, add the butter and stir until all the flour lumps disappear. Leave the dough to rest for 20 minutes. I covered it with a lid or a towel.

    Place the risen dough on the table and start kneading. It is not necessary to add flour; the dough does not stick at all. Knead it until smooth and elastic.

    Place the dough back into the bowl, cover and leave for about 40 minutes to rise.

    The dough should double in size. That's it, you can start making bagels, but first of all, turn on the oven to preheat to 220 degrees.

    Place the dough on the table again and divide into equal parts. I made half a batch, I got 6 pieces. Make a bun out of each one.

    Before you start forming the bagels, you need to put a pan of water on the fire and boil it. The bagels should not be left to proof, this will worsen them, everything must be done quickly. Form a bagel, to do this, take a bun and make a hole in it with your thumbs.

    Start stretching the dough, kneading it all around, to a thickness of about 1-1.5 cm. Place the resulting bagel on the table.

    Now we need to boil them. Place the bagel in boiling water and count to 10.

    Remove the bagel with a slotted spoon, shake off a little drops of water and place on a saucer with sesame seeds. Then transfer the bagel to a baking sheet covered with parchment, turning the sesame seeds upside down.     Do this with all the donuts. Place the baking sheet in the oven. If you are making a whole batch, start forming the next ones only after the first pan is baked.

When I saw a recipe for homemade bagels on the website, I simply couldn’t pass it up. I really wanted to cook. To be honest, I never thought about the fact that bagels can be made at home. It took me three glasses of flour, as indicated in the recipe. The dough turned out to be very tender and soft, it only slightly stuck to your hands, which did not interfere with working with it at all. The technology for preparing bagels was very interesting for me, I never thought that first they need to be kept in boiling water and only then sent to oven. I didn’t have sesame, so I didn’t replace it with anything. I baked the bagels for 25 minutes at 220 degrees: 10 minutes on the middle level of the oven and 15 minutes on the top one. The bagels turned out wonderful. They are fragrant and tasty. The bagels came out soft, but not like buns, but like bagels. My husband said they taste like store-bought ones.
