STEP 1

How to make bagels at home? Prepare the necessary products.
STEP 2

Heat the water to a temperature of about 35 degrees, it should become pleasantly warm to the touch, but not hot at all! Yeast is a living organism and can die in hot water. Read about all the intricacies of working with yeast in a separate article, link at the end of the recipe. Add yeast and sugar to the water, stir and leave for 15 minutes.
STEP 3

After 15 minutes, a “cap” like this should form on the surface - this means that the yeast is good, working, it has woken up and begun to act. Add salt and all the flour, after sifting it. Thanks to this, it will be saturated with oxygen, and the finished dough will turn out more tender. Start stirring with a spoon.
STEP 4

When all the flour is wet, add the butter and stir until all the flour lumps disappear. Leave the dough to rest for 20 minutes. I covered it with a lid or a towel.
STEP 5

Place the risen dough on the table and start kneading. It is not necessary to add flour; the dough does not stick at all. Knead it until smooth and elastic.
STEP 6

Place the dough back into the bowl, cover and leave for about 40 minutes to rise.
STEP 7

The dough should double in size. That's it, you can start making bagels, but first of all, turn on the oven to preheat to 220 degrees.
STEP 8

Place the dough on the table again and divide into equal parts. I made half a batch, I got 6 pieces. Make a bun out of each one.
STEP 9

Before you start forming the bagels, you need to put a pan of water on the fire and boil it. The bagels should not be left to proof, this will worsen them, everything must be done quickly. Form a bagel, to do this, take a bun and make a hole in it with your thumbs.
STEP 10

Start stretching the dough, kneading it all around, to a thickness of about 1-1.5 cm. Place the resulting bagel on the table.
STEP 11

I advise you to make all the donuts at once.
STEP 12

Now we need to boil them. Place the bagel in boiling water and count to 10.
STEP 13

Remove the bagel with a slotted spoon, shake off a little drops of water and place on a saucer with sesame seeds. Then transfer the bagel to a baking sheet covered with parchment, turning the sesame seeds upside down. STEP 14

Do this with all the donuts. Place the baking sheet in the oven. If you are making a whole batch, start forming the next ones only after the first pan is baked.
STEP 15
