It is different for everyone, the quantity may vary. We need to knead a homogeneous, soft dough that will not stick to our hands.

    I add a little more flour during the process. In the recipe I indicated 160-200 grams. This time it took me 180g.

    This is how the dough should turn out. Keeps its shape well, homogeneous, elastic and non-sticky. I wrap it in a bag and put it in the refrigerator to rest for 10 minutes.

    After refrigeration, I spread it in an even layer over the pan. The bottom of the mold was covered with parchment paper. The size of my form is 19*24. And put it in a preheated oven at 170 degrees for 10 minutes.

    In the meantime, prepare the filling. Coconut layer. I add a pinch of salt and sugar to the eggs and mix everything well. Then I add all the coconut flakes there. I mix everything.

    The filling is ready. If, suddenly, it is a little runny (everyone’s eggs are different), add a little coconut. If on the contrary it is dry, add a little milk.

    I cut bananas at least 5 mm thick. It tastes better this way :) It is desirable, of course, that they are well ripe. After baking, the bananas become creamy. It's very tasty. In the process I cut another banana. In total it took me 3 pieces.

    After 10 minutes, I take out the half-finished cake. I don’t turn off the oven, it will come in handy again soon. And while the cake is still hot, I put bananas on it.

    And I put coconut filling on top. I distribute it well, trying to fill the gaps between the bananas. And I put it in the oven again. 170 degrees until golden brown.
