STEP 1
How to make assorted zucchini and cucumbers for the winter? The amount of spices is indicated for marinade per three liters of water. This twist is best done in mid-July, when the zucchini is still young and tender.
STEP 2
You need to start by soaking the cucumbers, wash the cucumbers in cold water, put them in a deep container, fill with cold water and leave for a couple of hours.
STEP 3
During this time, it is advisable to change the water. Then we wash the cucumbers again and cut off their ends on both sides.
STEP 4
While the cucumbers are soaking, you need to prepare the jars. Jars of the required volume, it is more convenient to take liter jars, wash them with soda solution. We sterilize them in the oven, place the jars, wet with the neck down, on a wire rack in a cold oven. Turn on the oven at 150 degrees and sterilize the jars for about 15 minutes. You can sterilize jars in another convenient way. Wash the lids, boil and dry.
STEP 5
If the cucumbers are small and beautiful, then they can be used whole for pickling. Large fruits can be cut into large pieces or pucks. We also wash the zucchini and cut off the ends on both sides. If the zucchini is quite mature, then you can remove both the skin and the seeds. Cut the zucchini into circles about 2 centimeters thick.
STEP 6
Place a few cloves of garlic, peppercorns and a bay leaf at the bottom of sterile jars. We pack the cucumbers tightly, placing them vertically. Place zucchini slices on top. If the cucumbers and zucchini are cut into pucks, you can alternate them when placing them in jars.
STEP 7
Pour boiling water over the cucumbers and zucchini up to the hangers of the jars. Cover the jars with lids and leave for 15 minutes.
STEP 8
Then pour the water from the cans into a saucepan, add sugar and salt, turn on the heat, and bring to a boil. Add vinegar. Turn off the fire immediately.
STEP 9
Pour boiling marinade into jars of vegetables. We roll up the jars with lids and turn them upside down.
STEP 10
Wrap in a towel and leave at room temperature until completely cool. We store the workpiece in a cool place. Bon appetit!
