Wash the eggplants thoroughly, peel them and cut them into two pieces lengthwise.

Rub each piece with a mixture of sugar and salt and leave for a while.

After a couple of hours, wash and dry the eggplants using a clean towel or cloth.

Cut the garlic into thin slices. You need to cut the zest from the lemon.

Take a container of a suitable size, pour in vegetable oil. When the oil is hot, add lemon zest and chopped garlic into it. Fry over medium heat for about five minutes until browned. Then remove the garlic and zest from the oil, and leave the oil to cool.

Fry the prepared eggplants in a frying pan on both sides until a crust forms.

Mix the cooled butter with sugar, honey, pepper and coriander.
STEP 9
Heat the resulting mass over low heat until the consistency resembles caramel.

Pour the caramel over the fried eggplant pieces and leave for several hours until it hardens completely.
