American filled donuts
Ingredients
Step-by-step preparation
STEP 1
We heat the water to 40 degrees, it should be lukewarm. Pour it into the container, then pour dry yeast into the container. Gently mix the contents of the container and leave it alone for 7 minutes. Pour milk into a ladle, put it on low heat, heating the milk to 45 degrees.
STEP 2
Now take a deep container into which we pour granulated sugar, beat in an egg, and put a piece of butter at room temperature. Then pour in the yeast mixture, after which add flour sifted through a sieve (170 g). Pour in the warm milk and mix all the ingredients for a couple of minutes with a mixer using the hook attachment.
STEP 3
Then sift the second half of the flour into the dough and turn on the mixer again. Knead the dough until smooth for 7 minutes. The dough should be sticky.
STEP 4
Let's prepare the work surface for further work with the dough by sprinkling its surface with a small amount of flour, on which we spread the dough. Sprinkle the top of the dough with flour, then form the dough into a ball. Now take a container, which we grease with vegetable oil. Place the dough in it and cover with cling film. Place the container in a warm place (for example, next to the radiator) for 1.5 hours so that the donut dough doubles in size.
STEP 5
At the end of this time, sprinkle the work surface with flour again. Then take a piece of dough (not all of it, it will be more convenient to work with). Roll it out to a thickness of 1 to 1.5 cm. Take a tool specially designed for cutting donuts and use it to cut out the so-called “donuts”. If there is no such tool, then you can use, for example, a glass, where its diameter is quite large, and a glass, with a small diameter (for cutting out the center).
STEP 6
Pour vegetable oil into the pan and put it on the fire, heat it well (preferably the temperature is 180°C). We check the oil by throwing a small piece of dough into the oil, if it starts to foam, then you can start frying the donuts.
STEP 7
Carefully place one donut at a time into the oil. Place no more than 3 donuts at a time, fry them, turning them a couple of times during frying, and then place the already fried donuts on paper towels to get rid of excess fat.
STEP 8
Now let's move on to the process of filling donuts with filling. To do this, take a pastry bag with a nozzle, put jam in the bag and, making several cuts in the donuts on one side, fill them with filling.
STEP 9
Now let's prepare the glaze. To do this, sift the powder through a sieve into a bowl and pour in one tablespoon of lemon juice, mixing the ingredients thoroughly, you should get a thick paste, which we will apply to the donuts. If desired, you can make colored glaze using dyes. You can optionally sprinkle the top of the donuts with grated chocolate or confectionery sprinkles.
STEP 10
Serve donuts with black coffee or tea!
