Wash the tomatoes thoroughly under running water.

    If the skin of the tomatoes seems tough, it is better to remove it. How to easily peel tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin. But it is not necessary to remove the skin. Cut out the place where the stalk attaches to the tomatoes, cut the pulp into pieces.

    It is better to use red bell peppers for adjika so that the appetizer turns out to be a rich, bright and uniform color. Rinse the bell pepper thoroughly under running water, using a brush. All vegetables for snacks must be washed especially well, since they are not subject to heat treatment. Cut the peppers into two halves, remove the stem with the seed capsule. Cut the bell pepper pulp into large strips or cubes.

    Place all ingredients in a deep container or pan made of material that does not oxidize from vegetable juice - stainless steel or enameled. Using a blender, puree all ingredients. Instead of a blender, you can use a regular meat grinder.

We brought homemade vegetables from the dacha in large quantities and I decided to make adjika. I found this recipe, it’s very simple and quick, no long cooking, no hassles. Everything was available. I also added a little onion. I washed, peeled and cut all the vegetables. I crushed it in a saucepan with an immersion blender, which is very convenient and quick. Added salt and freshly ground pepper. Adjika steeped for an hour and then we took a sample. Tasty, juicy, aromatic!!! I rolled up some of the adjika for the winter, and left some for now to eat. We tried it with just bread, pasta, potatoes, and chicken. This adjika goes with everything. It is medium thick, tender, aromatic, tasty. I didn’t make the adjika spicy, it came out a little sweet.
