Adjika tomatoes with garlic and pepper without cooking
Ingredients
Step-by-step preparation
STEP 1
How to make adjika from tomatoes with garlic and pepper without cooking? Prepare your food. It is better to use tomatoes for adjika that are well ripe, you can even overripe, cracked, or even fruits of an “unpresentable” appearance, but in no case spoiled or rotten, as these can ferment. Wash the tomatoes thoroughly under running water.
STEP 2
If the skin of the tomatoes seems tough, it is better to remove it. How to easily peel tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin. But it is not necessary to remove the skin. Cut out the place where the stalk attaches to the tomatoes, cut the pulp into pieces.
STEP 3
It is better to use red bell peppers for adjika so that the appetizer turns out to be a rich, bright and uniform color. Rinse the bell pepper thoroughly under running water, using a brush. All vegetables for snacks must be washed especially well, since they are not subject to heat treatment. Cut the peppers into two halves, remove the stem with the seed capsule. Cut the bell pepper pulp into large strips or cubes.
STEP 4
Peel the garlic cloves and cut them into large pieces.
STEP 5
Wash and dry the hot pepper pods. Remove the seeds from the pod and cut the pod itself into several pieces. If you want the adjika to be spicier, you don’t have to remove the seeds from the hot pepper. When working with hot peppers, you must wear rubber gloves to avoid damaging the skin of your hands.
STEP 6
Place all ingredients in a deep container or pan made of material that does not oxidize from vegetable juice - stainless steel or enameled. Using a blender, puree all ingredients. Instead of a blender, you can use a regular meat grinder.
STEP 7
Add salt and vinegar to the vegetable mixture, stir and leave to steep for an hour. Meanwhile, prepare jars with lids for the preparation. Wash them with soda and sterilize them in any convenient way. For information on how to do this, follow the link at the end of the recipe.
STEP 8
Place the adjika into the prepared jars, roll them up and store them in the refrigerator. Bon appetit!
