    Mix chopped pepper and garlic in a deep container. Add spices to them (coriander, cilantro and suneli hops). You can add walnuts, which must first be peeled (if you are using unshelled ones) and crushed in a mortar. I did not add walnuts to the list of necessary products, because this is all up to your personal wishes and taste - just take note of this point and decide whether you will follow my advice. Mix everything.

    Sprinkle the adjika mixture with coarse salt and pour in 3% vinegar, the result is a moist and thick paste, which is very well suited for long-term storage, put this paste in sterilized jars and store in a tightly sealed container.

I didn’t quite understand the recipe - red hot pepper and garlic? is that practically all? Well, not counting the seasonings. Is there any tomato or bell pepper? how can you eat this? total burning! I probably wouldn’t risk trying this mixture; I would still dilute it with tomatoes or bell peppers. maybe it won’t be completely Georgian, but it will be swallowable

Fiesta, they don’t actually eat adjika. This is a seasoning. The same as cilantro or suneli hops. It is added to various dishes, coated with it on chicken tabaka when frying in the oven, and so on. Adjika is based on red hot pepper. And adjika is not intended for those who don’t like spicy food. This is a specific seasoning. Almost the same as Mexican chili pepper (the one that is scary to even smell). What you are describing has nothing to do with adjika.

A very simple and quick recipe (it took me 10-15 minutes). Before that, I made adjika according to a different recipe, but my family (and me too) liked the taste of it more, so I started making it more often. It’s especially delicious with cutlets and fried meat. Thank you very much to Daria aka Gerda for such a delicious recipe.
