To prepare caviar for the winter, it is preferable to select young zucchini or zucchini, with delicate skin and soft seeds. The latter is especially important for a meat grinder. The fact is that if the seeds in vegetables are hard, after grinding they will simply be crushed, but the hardness will not go away. This is unacceptable for a delicate snack.
The selection of products for the classic recipe for squash caviar through a meat grinder is the same as for the one prepared using a blender, grater or food processor. In addition to the main ingredient, these are: carrots, onions, tomatoes (which can be replaced with 100% tomato paste), vegetable oil, vinegar and salt. In some cases, housewives like to add mayonnaise for greater tenderness, but this is optional.
If the seeds in the zucchini are hard and there is no way to pick others, you will have to get rid of them with a knife. If the peel is hard, you need to cut it off too, leaving the soft one. It is enough to scroll the vegetables once. Then transfer to a colander to drain excess moisture. Chop the carrots and onions in a meat grinder, then fry in oil, followed by the addition of zucchini mass and crushed peeled tomatoes. You need to cook for a long time, up to two hours, although the exact time will depend on the recipe and the volume of vegetables. Set the fire very slowly.
At the very end, add seasonings, herbs, vinegar. Place in jars and sterilize to be safe, although this will be redundant, since the caviar was already cooked on fire enough for all the microbes to die. It is worth keeping in mind that compared to zucchini caviar prepared without a meat grinder, this one will have a different consistency. And if you don’t like this too much, then you can use a blender to puree the caviar when it’s ready. But this is a matter of personal taste and preference.
