    How to make zucchini for the winter? Prepare your food. It’s good if you take zucchini of different colors: yellow, green; the combination of such vegetables in a jar will make the preparation brighter and more interesting. But using zucchini of the same color will not affect the taste. The set of spices and seasonings can be changed to suit your taste.

    The preparation is done quite quickly, so prepare the zucchini jars in advance. Wash the container with soda solution and sterilize using one of the convenient methods. I like sterilization in the oven; this proven method has not yet failed me - in a short time a significant number of jars are ready for sealing.     Wash the zucchini thoroughly and dry. Cut off the ends of the vegetable on both sides. There is no need to peel zucchini; they have delicate skin, and there is no core with seeds as such. Cut the zucchini into circles no more than one centimeter thick.

    Place the chopped zucchini tightly in sterile jars. Between the layers, place several sprigs of parsley, peppercorns, cloves, and bay leaves. If desired, you can add a couple of cloves of garlic for flavor.

    Prepare the marinade. How to make a marinade? Pour filtered water into the pan. Add sugar, salt, put on fire, stir until the bulk ingredients are completely dissolved. Let the marinade boil, pour in table vinegar. Turn off the heat immediately.

    Pour the boiling marinade over the zucchini in the jars so that the marinade completely covers the vegetables and reaches the shoulders of the jars. Immediately seal the jars with sterile lids. Allow the workpiece to cool “under the fur coat” upside down, at room temperature. Store the pickled zucchini until winter in a cool place: in the refrigerator or in the basement. Bon appetit!
