STEP 1
How to bake yeast pies with green onions and eggs in the oven? Prepare and measure all the necessary ingredients. Food should be at room temperature, so take anything stored in the refrigerator out for at least an hour before cooking. It is better to take premium flour; it is well suited for making yeast dough.
STEP 2
Sift the flour through a fine sieve. This will enrich it with oxygen. The dough will rise easier and will be more airy and fluffy. Take a wide bowl so that when sifting the flour does not spill out onto the table.
STEP 3
Pour yeast and 1 tsp into a small bowl. Sahara. Fill with warm water (35-39 degrees), stir. If the water temperature is higher, the yeast will die. Leave the mixture for 10-15 minutes to activate the yeast. During this time, a foamy “cap” will form on the surface; if this does not happen, then you need to take other yeast, since with this the dough will not rise.

To prepare the dough, take a deep, stable bowl. Why exactly this? It is more convenient to knead the dough in a stable bowl. And sufficient depth will give the dough the opportunity to rise and not “run away” over the edges. Break the egg into a bowl, add salt and the remaining sugar and whisk until smooth.

Warm the milk slightly, this will help the dough rise faster. Combine milk with beaten egg, stir.
STEP 6
Add suitable yeast, stir.
STEP 7
Pour in vegetable oil to make the dough softer. Stir.
STEP 8
Add flour to the liquid mixture. You can do this through a sieve. Re-sifting the flour for the dough will not be superfluous. Do not add all the flour at once, add about 3/4 of the total amount of flour, mix with a spoon.

The dough will be very sticky and viscous.

Then add flour in small portions, while mixing the dough with your hands. You may need a little less or more flour, depending on the required consistency of the dough.

The dough should be soft, tender, slightly sticky to your hands. Don't add too much flour so it doesn't become heavy and crusty. Cover the dough with a towel to prevent it from airing. Leave in a warm place to rise for 1-1.5 hours. Rising time will depend on yeast activity and ambient temperature.

How to make filling for pies? Prepare the necessary ingredients.

Wash the eggs with baking soda under running water, place in a saucepan and cover with water, bring to a boil. Boil the eggs hard for 7-8 minutes. Cool the eggs in cold water.

Rinse green onions under cold water, dry with paper towels, and chop finely. Crush the onion a little to make it juicier.
STEP 15
Peel the cooled eggs from their shells and cut into small cubes.
STEP 16
In a convenient container, combine green onions and eggs, add salt and mix. The filling is ready.

The dough rose well and increased in volume by almost 2.5 times. I took the largest bowl, but still there wasn’t enough room for the dough, but it didn’t run away.

Gently knead the dough and place it on a table sprinkled with flour. In this case, you can also dust your hands with flour or grease them with vegetable oil so that the dough does not stick to your hands. Divide the dough into equal parts depending on the desired size of the pies. Cover the pieces with a towel to prevent them from drying out while the baked goods are forming.
STEP 19
Roll each piece of dough into a round shape.
STEP 20
Place a tablespoon of filling in the middle of the flatbread.
STEP 21
Form the pie into the desired shape, pinch the edges well. Make the rest of the pies in this way.
STEP 22
Place the formed pies on a sheet covered with oiled parchment. Be sure to leave space between the pieces as they will rise during baking. Let the pies rest for 15 minutes.
STEP 23
Break the egg into a bowl and beat it with a fork until smooth.
STEP 24
Brush the tops of the pies with beaten egg to give them a nice golden brown color after baking. It is convenient to do this with a silicone brush.
STEP 25
Bake the pies in an oven preheated to 180°C for 20-25 minutes until golden brown on top. Baking times are approximate and will depend on your oven.
