I rolled the cakes without completely removing the sheet from the oven, as they quickly harden and can break. If your cakes still harden, place the sheet in a warm oven and they will become soft.

    While the tubes are cooling, let's make the cream. Separate 2 egg whites. Yolks, including the yolk left over from the tubes, can be used for other purposes. Beat the whites with a mixer until the volume increases; to make the whites stable, add a little citric acid. Without stopping whipping, add sugar in small portions. Beat until stable peaks form. At the end we add vanillin.
