Tomatoes with horseradish and garlic

Ingredients
Step-by-step preparation
STEP 1

How to prepare tomatoes with horseradish and garlic for the winter? Prepare the necessary ingredients. Wash all vegetables and horseradish roots and pat dry with paper towels. To prepare horseradish, you can use large, slightly broken, crumpled, but not spoiled tomatoes, those that will not be used for pickling in their entirety. You will learn all the details of the preparations in the article at the end of the recipe.
STEP 2

Cut the tomatoes into pieces, cutting out where the stem attaches. If it seems that the skin of the tomatoes is thick and tough and will spoil the sauce with its presence, you can remove it by pouring boiling water over the tomatoes and then dipping them in cold water.
STEP 3

Pass the tomatoes through a meat grinder or punch them with a blender.
STEP 4

Peel the garlic cloves and also pass through a meat grinder, press or grate. Peel the horseradish roots and also mince or grate.
STEP 5

To avoid the spread of caustic fumes from the horseradish root during chopping, you can put a bag over the outlet of the meat grinder with an elastic band and secure it. When using a grater you will have to be patient a little.
STEP 6

Place the tomato mass, garlic and horseradish in a deep saucepan. You can add a piece of hot pepper if you wish for taste. Add sugar and salt. Place the pan on the fire. After boiling, cook the mixture over low heat for about 5 minutes. If you want the sauce to be thicker, boil it longer to allow the excess liquid to evaporate. Read the article below for how to choose a pan.
STEP 7

Prepare jars for the sauce in advance. It is better to use small containers. Although even after opening such a product does not spoil for a long time, it is still better to eat a fresh product. Wash the jars with soda and sterilize in one of the convenient ways: in a water bath, in the oven or in the microwave. I burned the jars in the oven. Wash the jar lids, boil and dry. Read more about sterilization in the article at the end of the recipe.
STEP 8

Place the horseradish into sterile jars and immediately close the lids. Turn the jars upside down and cover with a blanket. After cooling, store the workpiece in a cool place. It does not require additional sterilization, since it contains one of the best preservatives - horseradish, it will not allow the sauce to spoil for a long time. Bon appetit!
