  1. STEP 1

    STEP 1

How to prepare tomatoes in tomato sauce for the winter? Prepare the ingredients according to the list. There are two types of tomatoes suitable for this preparation: small, beautiful and strong as a base, and large, unsightly and perhaps even overripe for preparing the filling. Wash and dry the tomatoes.

  2. STEP 2

    STEP 2

Cut large tomatoes into several pieces, cut out the place where the stalk is attached. Place the tomatoes in a saucepan and put on fire.

  3. STEP 3

    STEP 3

Cook the tomatoes over medium heat for about 10 minutes, stirring occasionally to prevent them from burning to the bottom of the pan.

  4. STEP 4

    STEP 4

Sterilize jars for preparation in advance using one of the convenient and proven methods: in a water bath, in the oven or in the microwave. When sterilizing in the oven, wash the jars, preferably with soda, and place them damp on a wire rack in the oven, neck down. Turn on the heat to 150 degrees and sterilize jars (1 liter capacity) about. Peel the horseradish root and garlic cloves.

  5. STEP 5

    STEP 5

Grate the horseradish root and garlic.

  6. STEP 6

    STEP 6

Add chopped horseradish, garlic, sugar and salt to the tomatoes.

  7. STEP 7

    STEP 7

Grind the tomatoes with a blender until you obtain a homogeneous puree. Stir and continue cooking over low heat with the lid on. Skim off any foam that forms on the surface. Cook the mixture for about 15 minutes, stirring occasionally with a spatula so that the tomato paste does not stick to the bottom.

  8. STEP 8

    STEP 8

Add bay leaf, peppercorns and other spices as desired.

  9. STEP 9

    STEP 9

Cook the sauce for another 5 minutes until it thickens, remove the lid from the pan. Turn off the heat.

  10. STEP 10

    STEP 10

While the tomato filling is cooking, place whole tomatoes tightly and up to the shoulders in sterile jars.

  11. STEP 11

    STEP 11

Pour boiling tomato juice over the tomatoes in the jars. Cover the jars with lids, but do not close them tightly. Place the jars in a pan of water to sterilize for about 15 minutes. The bottom of the pan must be covered with a cloth so that the glass does not burst from contact with the metal.

  12. STEP 12

    STEP 12

You can sterilize the workpiece in the oven at 150 degrees for about 20 minutes (1 liter jars). Close the jars with lids and leave upside down under a blanket at room temperature until completely cooled, then store in a cool place. Bon appetit!
