STEP 1

Add cognac to the chilled coffee and, moistening the cookies, place the first layer on the tray.
STEP 2

Whip the cream with some of the powdered sugar until thick foam and put it in the refrigerator.
STEP 3

Separate the yolks from the whites. Beat the yolks and whites separately with some of the powder until thick foam (if we beat them poorly, the cream will then become liquid)
STEP 4

Add cheese to the beaten yolks and mix with a spatula (do not beat under any circumstances), then add the whipped whites and cream.
STEP 5

Place the first layer of cream on top of the cookies.
STEP 6

Place a second layer of cookies.
STEP 7

And apply the remaining cream.
STEP 8

Sprinkle with cocoa powder and put in the refrigerator.
STEP 9
