Pour sugar into a stainless steel pan. It's better to take hot water

Pour water over sugar and stir until dissolved.

Place the pan with the syrup on the stove, turn on high heat, when it boils, skim off any foam that has formed and cook with the lid closed for about 10 minutes until it becomes a soft ball.
STEP 5
Soft ball test - to get a soft ball, you need to periodically take a sample of the syrup with a cold teaspoon, then quickly cool it in a bowl or plate with cold water. After rapid cooling, you need to try to roll the syrup into a ball. If you managed to roll the ball and it does not stick to your hands, then the syrup is ready.
STEP 6
Cool the syrup; to do this, simply place it in a bowl of cold water.
STEP 7
Add citric acid. You can measure it with a teaspoon, or you can simply squeeze 12 drops from lemon.
STEP 8
Beat with a mixer until the syrup turns white and curls into a crystalline mass.
STEP 9
To glaze the fondant, you need to heat it to 45-50 degrees. If you add coconut flakes, you get a textured coating for the cake.
STEP 10
You can tint the fondant with food coloring and make figures.
