STEP 1
How to make strawberry liqueur? Prepare the following ingredients. It is not necessary to make this drink during the berry harvest season, in the summer. In winter, you can also make it using frozen strawberries. Carefully sort fresh strawberries, remove all sepals and rotten, spoiled berries. Rinse the strawberries under running water and place in a colander to drain.
STEP 2
Place the berries in a clean, dry, sterilized jar. Sprinkle each layer of strawberries with sugar and cover with gauze. The jar can be sterilized in the oven; to do this, wash it first with baking soda and place it upside down. Turn on the oven, preheat to 150 degrees and sterilize 1 liter jars - 15 minutes, 2 liters - 20 minutes. You can also sterilize jars in another way convenient for you: in the microwave or over steam.
STEP 3
Cover the neck of the jar with gauze and leave the jar in a dark place with a temperature of about 20-25 degrees for a couple of days. The berries should release juice and the sugar should completely dissolve. The berry mixture should have a sour smell and foam on the surface. This will mean that fermentation has begun and everything is done correctly.
STEP 4
Remove the gauze from the neck of the jar and put on a rubber medical glove. You need to make a small hole in one of the fingers of the glove with a needle so that air can escape freely during fermentation. However, air from outside should not get into the jar, so the glove should fit tightly to the neck of the jar; if necessary, it can be secured with an elastic band or tape.
STEP 5
Place the jar of strawberry preparation back in a dark place for 1.5-2 months. Periodically check the condition of the liqueur, shake it so that fermentation proceeds faster. Depending on the temperature, fermentation may stop earlier. If the glove deflates, the drink is ready. Strain the homemade liqueur through gauze folded in several layers to make the drink cleaner; you can put a piece of cotton wool between the layers of gauze.
STEP 6
Pour the liqueur into bottles, seal tightly with corks and store in a cool, dark place. Homemade liqueur turns out to have a strength of about 11-14 degrees. It can be stored for no more than two years at a temperature of 10-18 degrees.
