Let's prepare products for strawberry puree and gelatin icing and cake decoration.

Add sugar, vanilla sugar, salt to the eggs and beat with a mixer for 3-4 minutes. Add butter at room temperature in several additions.

Let's add kefir.
STEP 5

Sift the flour with baking powder and combine the whole mass with a mixer at low speed.
STEP 6

Distribute the dough onto a baking sheet (30 by 40 cm) lined with parchment paper.
STEP 7

Bake in the oven preheated to 180 degrees for 10-15 minutes. Check readiness with a wooden stick. Remove the cake from the baking sheet, remove the parchment and leave to cool completely. This usually takes 15-20 minutes.

Let's prepare the cream. Combine peeled bananas, weighed sour cream and powdered sugar (to taste) with a blender into a homogeneous mass. (To weigh out sour cream, you need to line a sieve with gauze folded in several layers, pour out the sour cream and leave in the refrigerator for 7-8 hours to drain excess moisture.)

Wash the strawberries and remove the stems. Blend 250 g of strawberries with sugar into a homogeneous mass.
STEP 10

Cut 100 g strawberries into small pieces. Leave the remaining strawberries for decoration.
STEP 11

Use a dough cutter or a glass (7-8 cm in diameter) to cut out the blanks for the cakes.
STEP 12

In half of the shortcakes, cut a hole with a diameter of 5-6 cm.
STEP 13

Grease the shortcakes with sour cream, place the cut out ring on top and do the same with all the pieces. Add another teaspoon of cream inside.

Grind the cake scraps in a blender into fine crumbs. Grease the sides of the cakes with cream and dip into crumbs.

Place chopped strawberries inside and pour strawberry puree on top.
STEP 16

Sprinkle generously with the remaining crumbs.

Let's prepare the glaze: pour gelatin with water and leave to swell.

Pour sugar, cocoa into a saucepan, pour milk and butter.

Bring to a boil over medium heat until the sugar dissolves, add the swollen gelatin and mix well.

Pour into a baking bag, cut off the edge and decorate the cakes.

It can be made simpler. Take the chocolate, put it in a cooking bag, and lower the corner with the chocolate into boiling water for a short time. When the chocolate has melted, decorate the cakes. Decorate with strawberries.

In the small cakes, I also made holes of a smaller diameter and did the same as with the large cakes. There were no scraps left, they were all used for cakes.

In less than one hour we made 10 large and 4 small delicious cakes. Let them soak for an hour, preferably two, but in our family no one waits that long, and they gobble up the cakes immediately after cooking. The base for the cakes is very tender and incredibly tasty; banana cream with strawberry puree and pieces of fresh strawberries is very tasty and not cloyingly sweet. Sour cream and banana cream darkens a little after some time, but this does not affect the taste in any way.
