Strawberries with citric acid without water

STEP 1

To prepare delicious and aromatic strawberry jam for the winter, we prepare the necessary products.
STEP 2

We take one kilogram of two hundred grams of fresh strawberries and remove the sepals, then after washing the berries under fast running water, we place them on a dish covered with a kitchen towel to remove moisture.
STEP 3

Place the strawberries in a dry and preferably metal container with an enamel coating, in our recipe a saucepan.
STEP 4

Pour sugar into a saucepan with strawberries, at the rate of three hundred and sixty grams of sugar per kilogram of two hundred grams of berries.
STEP 5

Mix strawberries and sugar well in a saucepan.
STEP 6

We set the saucepan with the berries aside for five to six hours so that the strawberries give as much juice as possible and stir every hour.
STEP 7

After time has passed, place the strawberries in clean, sterilized jars.
STEP 8

We do not compact or press the berries in the jars, and we also try to prevent the juice from getting into the jars.
STEP 9

Place the saucepan with the syrup on the stove and bring to a boil, then skim off the resulting foam.
STEP 10

Add one quarter teaspoon of citric acid to the saucepan with the syrup and stir, then boil for another minute.
STEP 11

Pour the prepared syrup into jars.
STEP 12

Pour the syrup into the jars without adding a little to the top.
STEP 13

Close the jars with clean and sterilized lids.
STEP 14

Putting a pan of warm water on the stove, cover the bottom with a napkin and place jars of berries in it, which we then sterilize for twenty minutes from the moment the water boils.
STEP 15

After twenty minutes, we take the jars out of the pan and turn them upside down with the lids, then cover them with a warm blanket or blanket and allow time to cool.
