    Beat the eggs with sugar into a fluffy foam. The airiness of your cake depends on how you beat the eggs. You can’t beat the mixture until it’s white and thick—the whites will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all or rise very weakly.

    Sift the flour with baking powder and pour into the egg mixture in parts, beating each time with a mixer until smooth.

If the bottom of the sponge cake is well baked, but the top is not yet ready, you can carefully turn it over and bake for another 2-3 minutes.

Thanks for the wonderful recipe! It is good not only for emergency situations (when the oven breaks down, for example, or you are at the dacha, where there is simply no oven). I personally liked it so much that I will cook it more often. Everything worked out the first time, although, I admit, I was afraid that my dough wouldn’t rise as well as the author of the recipe; I don’t have very good baking skills. That's why I baked with two layers. I coated it with jam and added whipped cream on top of the jam. The taste was amazing - very tender, pleasant and you can’t tell that it was baked in a frying pan.
