STEP 1
How to bake shortbread cake with jam? Prepare the ingredients according to the list. You can use ready-made apple jam for dessert or make it yourself from fresh apples, which is quite simple and quick if you have a blender. Peel, chop and cook the apples on the stove with a little sugar for about 25 minutes.

How to make shortcrust pastry for cakes? The ingredients for this will always be found in the refrigerator of caring housewives. Place butter, softened at room temperature, into a deep bowl. If you don’t have time to wait for the butter to soften naturally, you can melt it in the microwave.
STEP 4
Add sugar, salt, vanillin on the tip of a knife (otherwise it will add bitterness to the finished dessert), beat in two chicken eggs. Using a blender or mixer, stir the ingredients until the mixture is homogeneous in consistency. Wash eggs with baking soda before use, as there may be harmful bacteria on their surface.
STEP 5
Pour the sifted wheat flour combined with baking powder into the bowl with the mixture. Instead of baking powder, you can use baking soda on the tip of a knife, slaked with vinegar. You may need less or more flour, depending on the consistency of the dough.

Mix the ingredients with a mixer or spatula, knead into an elastic and smooth dough. You cannot knead shortbread dough for a long time, otherwise it may become hard and products made from it will not taste good. Wrap the dough in cling film and put it in the refrigerator for half an hour.
STEP 7
Divide the chilled shortbread dough into two or three parts, depending on the size of the baking dish. Roll each of them into a layer no more than 1 cm thick. Place the dough on a greased baking sheet and bake for about 10 minutes at 220 degrees. The times are approximate, be guided by the operating characteristics of your stove.
STEP 8
Let the finished cakes cool slightly, carefully cut the edges of the dough so that the cakes turn out smooth and beautiful. Grind the trimmings in a coffee grinder or rolling pin until crumbly.
STEP 9
Spread the first cake layer with apple jam. Place the second cake layer on top, also grease it with apple jam and sprinkle with sand crumbs.
STEP 10
Let the homemade layered shortbread dessert cool and soak in the refrigerator for 2-3 hours. Then cut it into rectangular pieces. The shortbread cakes are ready just like in childhood, serve them with tea or coffee. Bon appetit!
