Sesame cracker

A simple recipe for a crispy beer snack! French sesame crackers bake very quickly. These cookies have no harmful additives. Plus: by changing the proportions of sugar and salt, you can get other flavors, sweet or salty.

    How to make crackers? Prepare all the necessary ingredients. Take any refined vegetable oil. Use premium or first grade flour. I used white sesame, but you can use black or a combination of both types. Instead of sugar, you can use a sweetener that is not afraid of heat treatment.

    Sift most of the flour into a deep bowl. Add salt and sugar and mix well to distribute evenly throughout the flour. The flour needs to be sifted to remove small debris, if any, and to saturate the dough with oxygen for a more airy dough.

    Add vegetable oil. Rub the flour mixture into the butter with your hands until you obtain homogeneous fine crumbs.

    Pour water in small portions and knead the dough, collecting it into a ball.

    If the dough is too sticky, add flour a little at a time and knead the dough to the desired consistency. It should be a little elastic and not stick to your hands.

    Divide the dough into 2 parts. Roll out one half on non-stick parchment into a rectangular layer no more than 4 mm thick. If you are not sure about the non-stick properties of parchment, grease it with vegetable oil. Trim off any jagged edges and add them to the second portion of dough. Spread half the sesame seeds evenly over the rolled out dough. Press it into the dough by rolling it with a rolling pin.

    Cut into squares with a curly or regular knife. Make the size as you wish. Mine are about 2 x 2 cm. Prick each cracker with a fork in several places so that they bake evenly and are crispy. A standard large baking tray from your oven will do for baking. Transfer the parchment with the dough onto it. Place in an oven preheated to 180 degrees and bake until lightly browned, about 15 minutes. Determine the exact time in the oven.

On the one hand, making sesame crackers is very simple, on the other hand, the process requires some skill. I made the dough as indicated in the recipe. At first it turned out very sticky and soft (I used all the water and all the flour in the recipe), I continued to knead it with my hand until smooth and then left it in the bowl for a while. During this time, the dough cooled a little (from the warm water it was warm at first) and stopped being sticky, came together perfectly into a ball and rolled out with a rolling pin. The dough is very elastic; during rolling it tries to take its original shape. My first batch of cookies came out quite nicely; I managed to cut the cookies evenly with a curly knife (I forgot to prick them with a fork, which overall didn’t really affect the result). The second batch was made by children; the cookies turned out like puzzles, generously studded with a fork. It is not for nothing that the recipe states that the sesame seeds must be pressed into the surface of the dough using a rolling pin, otherwise it will peel off and crumble after baking. The result is real crackers, crispy and very tasty. I will definitely make these again. Thanks for the recipe!
