It is best to leave it on the bottom shelf of the refrigerator so that it defrosts on its own. To speed up defrosting, do not use hot water. Such extreme defrosting negatively affects the taste of the finished fish, making it dry.

    Carefully gut the fish, removing all the insides. You don't have to cut off the head. The whole fish will look more beautiful on the table in its finished form. Rinse the cleaned fish well in running water. The fish has very sharp fins - be careful!

    Dry the washed fish a little with paper towels to remove excess moisture. Sprinkle a little lemon juice inside the fish. This will eliminate the characteristic and intrusive fishy smell.

    Then coat the fish inside and outside with olive oil, salt and spices. I use dried dill as a spice. But you can also use a ready-made set of spices for fish. Place the coated fish on a sheet of foil and cover it on all sides with lemon slices. If desired, you can make longitudinal cuts in the fish and insert lemon slices into them.

    Wrap the fish in foil and place in a baking dish. To do this, you can use a ceramic, glass or metal mold. Place the mold with the fish in the oven, preheated to 200 degrees, for 30 minutes. Use your oven as a guide.
