Margot, as soon as it starts to boil, it will already be quite thick. If you don't have enough thickness, keep it on the fire a little more. But I usually film when it starts to gurgle.

It turned out very tasty, I cut the perch into fillets, and slightly changed the cooking sequence, first I prepared the vegetables and put them in the oven to bake, and while I was working on the fish, everything was already ready, I took it out of the oven, put the fish out, covered it with foil, and one more thing I returned it to the oven a little, and spent 2 hours on all the cooking.
