Roman style beef saltimbocca

Step-by-step preparation
STEP 1
Prepare the ingredients. To prepare Roman-style saltimbocca from beef, we will need: veal or beef pulp
STEP 2
Wash the beef and dry it.
STEP 3
Cut the roast beef along the wide side into 4-5 equal slices no more than 1 cm thick.
STEP 4
Beat each slice on both sides with a hammer as thin as possible.
STEP 5
Lightly salt and pepper each slice of beef.
STEP 6
Place a slice of bacon on each piece of beef.
STEP 7
Pick the 4 largest leaves from the sage. Wash and dry the leaves. Place a sage leaf on each piece of beef.
STEP 8
Use long toothpicks to pierce the pieces so that the meat, bacon and sage are securely attached to each other and do not fall apart when turning.
STEP 9
Heat a small piece of butter in a frying pan.
STEP 10
Fry the beef with bacon and sage on both sides for 2 minutes on each side.
STEP 11
Then transfer the meat to a plate.
STEP 12
Melt the remaining butter in a frying pan and pour in the wine. Simmer the sauce, stirring, for about 2-3 minutes over medium heat. Return the meat to the pan. Warm in the sauce for 3-4 minutes on each side.
STEP 13
Serve saltimbocca Roman style with wine sauce. In my opinion, the sauce here is the most delicious part of the dish. I poured it over the rice and ate it just like that without meat. Bon appetit!
