Kutia is a dish that has existed since ancient times, when it was considered ritual, and now it is not an ordinary food, but a manifestation of respect for the cult of ancestors and adherence to traditions. Kutya is now prepared not only in Russia, but in Belarus, Ukraine, Poland and many other countries. Such sweet porridge is served at Epiphany, Christmas, and also as funeral kutya - on wake days.

    Let's prepare the ingredients for rice kutia. It is better to take steamed rice for kutya so that it does not turn into a viscous porridge after cooking. In addition to raisins, you can use dried apricots and other dried fruits, nuts, and crushed almonds are often added.

    Rinse the rice well, changing the water several times until it becomes clear. The better the rice is washed, the less gluten will remain in it, and the more crumbly the porridge will turn out. Then put the rice in a saucepan or other metal container intended for cooking. Pour clean cold water over the rice so that the water covers the contents of the dish one centimeter above.

    While the rice is cooking, prepare raisins and other dried fruits when using them. We wash the raisins with running water, remove the stems and other impurities. Place the raisins in a deep bowl, pour boiling water over them, and leave for 15 minutes. Then drain the water and dry the raisins on a paper towel or other method. If available, prepare the rest of the dried fruits as well, finely chop them with a knife.

    Place the pan on the fire, bring to a boil, stirring the rice periodically so that it does not immediately stick to the bottom. Then reduce the heat to low and cook the rice until the water has completely evaporated; there is no need to stir the rice at this stage. Cook the rice for about 20 minutes. Then turn off the fire.

    Add honey and raisins to the finished rice and mix. If desired, you can add a pinch of salt to create a flavor balance. While the kutia is hot, transfer it to a deep bowl, cover the top with a plate and a towel so that it cools slowly. The kutia needs to cool completely before it is served at the festive or funeral table.
